Vegetarian "noodle" soup

One day I was craving pho, noodles, and seafood. But there was none of those available at home. Therefore, I improvised. I'm not one to really measure things when I cook, more like eye things and just add random stuff as I go along.

Here is my random recipe. What I had in minds was pho/seafood egg noodle soup. So Vietnamese/Chinese influence with some Korean loving :)

1. Into pot I poured a little bit of fish oil and sauteed garlic in that. Tossed in sliced mushrooms, cilantro for a short time
2. Poured in water over all that and let boil while I put in oyster sauce, sweet chili sauce and sriacha
3. Then put the rest of the vegetables in soup when fully boiling (I used mushrooms that look like skinny noodles as my "noodles")

The vegetables that I personally used were: carrots, red pepper, jalapeno, button mushrooms, bokchoy, onions, green onions
And I hardboiled an egg and cut it in half

There are so many ways you can add your own tastes or add variations simply by using different sauces, vegetables, broth source, and meats.
But the best part is that this completely satisfied my craving and was vegetarian as well!
