Cauliflower 'pizza - flat bread' crust

I've been meaning to try out this recipe for several weeks now and I finally tried it out today. Was prolonging this recipe because I knew it would take me a long time to prep and clean up after. I was right.

And it wasn't as successful as I optimistically wished it to be. But see the good in everything right? (still optimistic!) It was a nice.. cauliflower pancake-omelet-like result.



Here's how I went about it with some commentary.

  1. So.. ironically I was too lazy to dig out the processor and put the parts together, therefore I just diced the cauliflower with a knife to "rice" it. It was kind of therapeutic in a way just dicing along.
  2. steamed the riced cauliflower in microwave for 7 minutes
  3. didn't like the idea of wringing out water with towel so put the steamed cauliflower in mesh strainer and pressed on cauliflower to strain most of the water out. Left it in strainer and occasionally tossed/stirred cauliflower throughout the day. (I would do what every recipe says to do: use a towel to wring out the water. I believe my diced cauliflower was still a bit too moist to be optimal for this recipe)
  4. Tastykitchen Ok so I followed this one. Shredded some cheese, cracked an egg. Mix mix mix (I sprinkled Italian seasoning and chives as well). My "dough" looked pretty wet... but oh well there's no going back now!
  5. My parchment paper is only good to 420F but this recipe calls for 450F, so I sprayed olive oil on foil and then padded the cauliflower 'dough' and put that all on a baking sheet. (I would use parchment paper next time because I believe although I sprayed oil, the cheese in the dough has the affinity to stick regardless Trying to unstick the crust and flip onto other side broke it apart)
  6. Baked it for 10 mins and then tried to flip onto other side.. totally fell into separate crumbles. Try to pat everything back together into shape. (maybe next time I won't flip it, or maybe I'll let if bake a bit longer to become more hard)
  7. You can put your pizza sauce and toppings now and bake for 7 more minutes. (I didn't want to put any marinara, pesto, or other sauces. I just wanted a simple vegetable topping and eat it as flatbread) FINALE!
I think my main mistake was not wringing enough water out of the cauliflower. It made it humid in the oven unable for the crust to become crunchy. In the end, I was honestly disappointed although there was flavor. The texture was soft, between a mixture of mashed potatoes to soft pancakes (more towards pancakes though). I also think even though there was enough cheese to hold everything together, the sogginess of the cauliflower 'dough' made it quite ineffective. The egg, just made everything fluffyyy.


But don't let my experience deter you. I'm too impatient and baking has never ever been my forte. This is why I don't let myself have a sweet tooth for baking goods, since I don't have the skills to bake anything :( Personally, I think I won't attempt this anymore because it was a bit too much effort for me and I'll just save my pizza cravings for one of my high carb days.
However, one silver lining: I fricking ate 3 cups of cauliflower. Holy batman.
Also, this is a great for keto, vegetarian, vegan, gluten-free, low carb diets
