Pancakes for national pancake day!
Yesterday (2.5.2013) was National pancake day so IHOP was giving free pancakes to customers.
1. I did not want to stand a in a long ass line although it is free
2. I'd rather make my own but a healthier version
I was thinking about using protein powder to substitute for flour, but reading about how heat denatures protein made me a little iffy about that... so here's how I made these pancakes :)
How I made it:
1/2 cup strawberries, 1/3 coconut flour, 2 tbs, oats, 1/3 cup milk, and with a handful of almonds I threw everthing into my blender.
The "sauce" on top is just chobani yogurt. And I got the basic recipe from chocolatecoveredkatie.com but changed the recipe around a lot by taking out salts/vanilla extract/sugar
