Frozen baby carrot-apple bread or cake?
Tried to make Carrot-Apple bread today since I had a lot of frozen baby carrots
Used the recipe from here.
I just threw the baby carrots in the blender, so it became like a carrots freeze slush hahah. Also ended up blending a bit more than 1 cup of carrots, so next time we will use less.
We also used almond powder, and were without baking soda/powder along with sugar. Therefore, I used agave which I personally think works fine as I don't like the recipes too sweet. Then threw in some dried cranberries into the mix.
The end result - it was more like a moist cake. The cranberries gave it a strong sweetness, and the taste overall was pretty good!
The B rated it 8/10 and said would make it again, though he said he would prefer it more crunchy.
