Frozen baby carrot-apple bread or cake?

Tried to make Carrot-Apple bread today since I had a lot of frozen baby carrots Used the recipe from here . I just threw the baby carrots in the blender, so it became like a carrots freeze slush hahah. Also ended up  blending a bit more than 1 cup of carrots, so next time we will use less. We also used almond powder, and were without baking soda/powder along with sugar. Therefore, I used agave which I personally think works fine as I don't like the recipes too sweet. Then threw in some dried cranberries into the mix. The end result - it was more like a moist cake. The cranberries gave it a strong sweetness, and the taste overall was pretty good! The B rated it 8/10 and said would make it again, though he said he would prefer it more crunchy. Disclaimer - I am terrible at baking and don't know the science and art behind it 😆

Virtual Sets

It's been uplifting to listen to edm djs record their sets online during this pandemic-quarantine. It has also been touching that internet strangers have saved these sets for those who were unable to be available to watch the live streams. I haven't used soundcloud in years, however it has definitely been nostalgic to return to this and remember all the sets I saved in the past to dance along to in the comforts of my bedroom or garage. With the shelter-in-place, I intend once again to use these sets to dance and shuffle around to. Let's get back to uplifting ourselves and finding things that give us inner peace <3 But also, have you listened to edm while prepping and cooking?? It makes it so much more fun and hype! My schedule these days looks like Gryffin with my morning coffee, Tokimonsta while "WFH," ARTY for my workout, and Kaskade or Dab the Sky while I'm making dinner :)

Covid-19 in 2020, shelter-in-place, wk 4

I started this blog in my 20s, now I'm in my early 30s. It's funny how sometimes we remember our past, being nostalgic but mostly full of cringe. My creativity and want to indulge out of my comfort zone has ceased due to the busyness of life and complacency. You're so busy in life that you forget to live your life. And everything is piling up in the "do later" list. However, now that we are in quarantine mode almost indefenitely it seems, it's as if we have to reach into ourselves again to find happiness and satisfaction that is more foundational and simpler. For now, going to venture with the quarantine life and make the best use of this enforced self-discovery again.
